During starch processing, the starch is turned into
glucose and other syrup through controllable hydrolysis.
We used to process with acid method at high temperature
and high pressure. Now we can finish the processing
under moderate conditions if using enzyme preparations,
which will reduce cost, increase benefits, and heighten
conversion rate and wine output.
a-Amylase is deep cultivated by bacillus licheniformis,
and refined through extraction, etc. It can hydrolyze
starch, glycogen and a-1.4 glucosidic linkages in its
degradated material, to rapidly reduce the viscosity
of colloidal starch solution, produce soluble dextrin
and oligosacchride, and even small amount of glucose
and maltose.
Saccharifying enzyme, also named as glucoamylase (a-1.4-Glucanglucohydrolase),
can hydrolyze a-1.4 glucosidic linkages to produce glucose
from nonreductive end, and can slo slowly hydrolyze
a-1.6 glucosidic linkages into glucose.
